Summer 2021 Small Bites Release

Summer has arrived and so have our newest small bite pairings! As the weather heats up, chilled sparkling wine is often on our mind. While many may associate classic red or white wines with food pairings, we find that thoughtful sparkling wine and food pairings can bring out an array of flavors.

Our in-house chef has crafted these perfect pairings for visitors to enjoy alongside a flight of our Texas sparkling wines. Light and refreshing, these well-balanced bites serve as an enticing complement to our distinctive collection of Heath Sparkling Wines.

Adoration and Strawberry Goat Cheese Spread Pairing

It is no surprise that Adoration has become a favorite of many at Heath Sparkling Wines. With its gorgeous rose gold hue, this sparkling is nearly as enticing to look at as it is to drink. Featuring notes of cranberry, raspberry, wild strawberry and rose, Adoration presents a clean and silky finish.  

Now on our fourth vintage, Adoration continues to evolve. What started as a Texas sparkling wine made from 100% Pinot Noir, the current 2018 vintage is delicately crafted from 88% Pinot Noir and 12% Chardonnay.  

Our collection of Texas wine has grown in popularity not only here in the Hill Country, but throughout the nation as well. The 2017 Adoration was submitted to the 2021 Monterey International Wine Competition and earned a 90 Point Gold recognition, along with being named the “Best Sparkling Rosé”.

As we approach the summer months and find ourselves soaking up the last of spring, we are happy to share the recipe for our Adoration spring pairing. Seasonal small bites are thoughtfully curated by our in-house chef as a complement to each sparkling wine. Plan your visit here by scheduling a unique wine tasting experience at our state-of-the-art hill country winery.

Strawberry Goat Cheese Spread 

Ingredients: 

  • 8 oz of goat cheese 
  • 3-6 oz of strawberry preserves 

Instructions: 

  1. Using a blender or mixer, blend 8 ounces of goat cheese and 3-6 ounces of strawberry preserves (depending on taste). We suggest mixing in intervals as this allows the goat cheese to separate and mix at a more consistent rate.  
  1. Once blended, enjoy immediately or chill and serve later.  
  1. Spread on a fresh bagel or croissant and enjoy with a glass of Heath Sparkling Adoration.  

New Member Patio Coming Soon!

We are excited to announce the construction of the new Heath Sparkling Wines Member Patio!

At Grape Creek and Heath Sparkling, our philosophy is simple: We are a wine club winery, focused on our member benefits and a rejuvenating experience; with this in mind, we hold ourselves to a high standard when it comes to our wines and service at all our properties. Part of that focus shines through our commitment to developing new offers (like the Owner’s Clubs, featuring estate-grown grapes from our Texas Hill Country and Paso Robles vineyards) and facility enhancements like the member patio, restaurant, and the member weekend entrance.

The new Heath Sparkling patio is in line with our Members-focused approach. The setting is directly adjacent to our Heath Sparkling tasting room with the entrance by the fountain. The use of modern architecture is designed to complement our existing structure, seamlessly blending into the vineyard environment just a few feet from the patio and integrating the existing porch seating into the design. And, like the Grape Creek patios, members of any of our clubs can enjoy the new facility.

We will offer Heath Sparkling and Grape Creek wines, along with a “small bites” menu, all served tableside. We plan to launch reservations for patio seating at Grape Creek and, once completed, for the new Heath Sparkling patio. As we mentioned in a recent blog, the changes and growth we experienced last year are informing our long-term planning as well. Our members have enjoyed the changes and have been effusive with their feedback, and we have listened.

The targeted opening is scheduled for Fall of this year, with groundbreaking in March. We look forward to seeing you all there!

A Message From Our Owners

A lot has happened over the last few months at Grape Creek Vineyards and Heath Sparkling Wines, so we wanted to share an update on where we are and where we are going.

Covid forced a lot of change for all of us, individually and collectively. Our businesses were no exception. Parts of our operations were considered essential (winemaking, vineyards and warehouse/shipping) and other parts were subject to restaurant and/or bar rules. We worked diligently to be open and serving our members and guests whenever and wherever we could do it safely and within the law.

A Focus on Members

While many governmental restrictions were onerous, and some made little sense, we learned and adapted. In fact, many of the changes we might have tackled without facing limited options, but some we may not have. What we learned is many resulted in a better customer experience. Limited resources also meant even more focus on our members. While some members had to wait for a table (usually just on Saturday afternoons), most said they preferred it because once seated it was a nicer experience. Overall, we have had a lot of positive feedback regarding the changes and some past members rejoined due to the shifts in our approach.

Here are some adjustments we made and intend to keep:

  • Expanded table service for wine and food at all seating locations in member areas and the restaurant
  • Creation of a small bites menu available on the wine club patio, in addition to continuing full menu availability at the restaurant
  • Wine by the glass and small bites on the porch at Heath Sparkling for Heath Sparkling Wines members
  • Maître D assistance and coordination for a more personal tasting experience for new guests
  • 21+ only at all locations (this includes no infants as well)
  • ADA service animals only
  • All patio and restaurant seating dedicated to members only on Saturday and Sunday

As you can see, when we reopened in May, we made sure we applied our covid-restricted resources and occupancy toward our members.

So, what’s next?

  • We have extended our weekend member-only seating (patios, restaurant and lounge) to all day, every day and at all locations (where seating is available).
  • Stout’s Trattoria is expanding their kitchen space and equipment in early 2021 to enhance capabilities.
  • Due to high demand, only Grape Creek and Heath Sparkling members have access to purchase Heath Sparkling Wine.
  • Perhaps the biggest news, we are planning to break ground on a beautiful, new member patio at Heath Sparkling Wines in early 2021. Like our Grape Creek patios, we will offer reciprocal access to members of both wineries and we will serve both Grape Creek and Heath Sparkling wines on the new patio, with plans for a small bite menu, too!

Our members have been the energy and drive behind our growth over the years, and we want to return the favor and say thank you! Grape Creek and Heath Sparkling are truly “Wine Club Wineries”!

Visitation Tips

Everyone in our family are big Disneyland fans. Brian has been accused of being a little over the top in planning for maximum efficiency to achieve ride wait-time reduction and fastpass acquisition! Through all our visits, we also learned the experience at Disney was different on a Wednesday in early December than a July 4th Saturday. Neither is a bad experience (it’s Disneyland after all), but the experiences are different. The latter usually involves longer waits and more people in the park, which for some feels festive and for others a little crowded.

Our wineries are similar. The experience is different based on when you come. We do everything we can to make your experience wonderful, regardless of the day or season you visit. However, if you have the flexibility to visit during the week versus a weekend, or visit in January or September, as opposed to, March or October, you will find a little more elbow room and usually not much of a wait for anything. And of course, you can pick up your Grape Creek or Heath Sparkling wine allocations any day of the week.

As part of our ongoing efforts to enhance our members experience, we are installing a new software system with increased capabilities. This will allow us to consider a more robust reservation approach, including member patio and restaurant seating, for our busy days. We will keep you posted on this possibility.

How are Grape Creek and Heath Sparkling doing with all the shutdowns and limitations?

We get this question a lot, and the answer is we are doing surprisingly well. The support of our members and efforts of our staff have been absolutely amazing and we are very grateful.

We have experienced a couple of very positive, unanticipated outcomes. First, our member retention rate has been substantially higher than our normal level, which is already quite good. Secondly, our limited number of new guests are signing up for our wine club at a significantly higher percentage than prior to the shutdowns. We can’t fully explain these positive shifts, but we are very happy about them!

Due to our members ongoing commitment and loyalty, we have the resources to expand what we can offer and continue to improve your experience.

Follow these steps to access your account:

  • Go to heathsparkling.com
  • In the top left corner, click ‘LOGIN’.
  • Towards the bottom of the page, click the ‘Forgot your password?’ link.
  • Check your email inbox. You should receive a message titled: ‘Heath Sparkling Wines – Reset Password‘. Follow the steps within the email to reset your password.
  • At this point, you should be able to login from a desktop or mobile device. Feel free to edit your profile so that we have your current information.

COVID Limitations

Heath Sparkling Wines and all Grape Creek locations are open for all services.

  • We are maintaining lower overall occupancy levels and table/group spacing.
  • We clean and disinfect regularly.
  • Face coverings are optional based on the choice of each individual guest and staff member, per Governor Abbott’s executive order. Guests may request their serving staff member wear a face covering if desired.
  • Hand sanitizers are available throughout the property for your convenience.
  • Please review our House Rules.

2017 Blanc de Blancs Release!

We are thrilled to release our Blanc de Blancs for the very first time, appearing in the May wine club allocation.

Pop the cork! This wine scored 92 points at the Winemaker’s Challenge.

Stylish and enticing, this classic Champagne-style Blanc de Blanc features a lovely medium straw color with alluring aromas of lemon zest, Granny Smith apple, pear and caramel. Crisp yet rich in texture, the bubbles sparkle on our palate with a clean, lingering finish.     
100% Chardonnay
11.4% ABV
Sur Lie: 18 months
Style: Brut, 0.25% residual sugar
Serving Temperature: 45

Food Pairings

Brunch: Toasted bagel with cream cheese, smoked salmon, capers and diced red onion served with fresh melon and berries.

Dinner: Linguine with clams. A fancy, yet surprisingly simple dish to make.

A bit about this classic style. Blanc de Blancs is a French phrase for “white wine from white grapes”. In Champagne, France, this means it is 100% Chardonnay, since this is the only white grape legally allowed in production. The phrase first appeared in 1949.

It is the most age-worthy of sparkling wines, and over time begins to show characteristics of honey and buttered toast.

Blanc de Blancs is the most delicate of sparkling wines and should be served first in a flight if different styles are presented. Aroma and flavor profiles usually include stone fruit, green apple and lots of citrus. Often served as an aperitif, they are very elegant with high acidity and intriguing minerality.
