Blue Cheese Mousse
- 6 oz of blue cheese crumbles
- 4 oz of cream cheese
- 1/3 cup of heavy cream
- Pinch of salt
- Puree blue cheese crumbles and cream cheese Until smooth.
- Beat heavy cream in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up: the whipped cream will form soft mounds rather than a sharp peak.
- Fold whipped cream into the blue cheese mixture.
- Transfer into a piping bag.
- Spread over a crostini and pair with Heath Sparkling Euphoria
