Elevate the everyday cheeseboard.

Sparkling wine is never given credit for the perfect food wine it is. This bubbly beverage is typically high in acid, and high acid wines tolerate foods that are high in salt, making it the perfect pairing for your go-to appetizers. The combination is equal parts savory and refreshing.

Olives, prosciutto or spicy capicola and any cheese imaginable pair fabulously with sparkling wines. Texas goat cheese, triple cream Brie, and Havarti are a few of our favorites. Finish your spread off with fresh berries. We feel fruits that are lower in sugar complement Euphoria particularly well.

Our Chef Garde Manger, Savannah Zapata, shares her blue cheese mousse recipe featured with the ’16 Euphoria pairing in our tasting room. Check out the recipe for a simple aperitif sure to impress.

Euphoria & Blue Cheese Mousse

  • 6 oz of blue cheese crumbles
  • 4 oz of cream cheese
  • 1/3 cup of heavy cream
  • Pinch of salt

Puree blue cheese crumbles and cream cheese Until smooth. Beat heavy cream in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up; the whipped cream will form soft mounds rather than a sharp peak. Fold whipped cream into the blue cheese mixture.

Place baguette slices drizzled in olive oil in the oven for a crispy base and serve with dried apricots to fully recreate the Euphoria pairing from Heath Sparkling.
