Four distinct cuisines. Four distinct flavors. Paired with four distinctive sparkling wines. The Heath Sparkling spring small bites have officially arrived, and these seasonal pairings are unlike anything we’ve had before.

Our newly released pairings were thoughtfully crafted using spring flavors while drawing inspiration from four styles of cuisine: Italian, Latin American, Peruvian-Cajun fusion, and Americana. With crawfish boils kicking off and Fredericksburg peach season just around the corner, our in-house chef, Erik Hendley, took a delicious spin on these Hill Country classics creating dishes that not only enhance the flavors of each sparkling wine but will also make your taste buds sing.

Winter Sparkling Wine Flights & Small Bite Pairings

Winter often means colder temperatures, shorter daylight hours, and a long haul to Spring Break once the holidays are over. But around here, the turn of a season means a fresh selection of seasonal small bites paired with a flight of our exceptional sparkling wines. And this winter season, our in-house chef Brayden Lacey has outdone himself. With every new pairing selection, we find ourselves asking for the recipes and this time is no different (see below). Our winter small bite pairings have been carefully curated for you to enjoy all the winter flavors in bites that complement each of our sparkling wines. With flavors of rhubarb, fig, and olive and bites from tapenades to chorizo meatballs, it will surely leave your taste buds singing.

Chicken & Chorizo Meatballs with Orange-Ginger Glaze

Prep Time: 30 minutes Total Time: 16-20 minutes Servings: 3.5 dozen 2oz meatballs

Ingredients:

Meatballs

  • 1lb ground chicken
  • 8oz ground chorizo
  • 1/2 cup Panko bread crumbs
  • 1 egg, beaten
  • 6oz orange juice (pulp free)
  • 1/4 cup cilantro, chopped
  • 1/4 cup picante salsa (option to use salsa verde instead)
  • 3 gloves of garlic
  • 1 shallot
  • 1 Tbsp salt
  • 1 Tbsp pepper
  • 1 Tbsp chili poder
  • Chives and sesame seeds for garnishing

Ginger-Orange Glaze

  • 2 jars orange marmalade (Smuckers brand preferred)
  • 1/4 cup Ebullience Heath Sparkling Wine
  • 1 ginger root, grated
  • 1 cup sugar
  • 1 shallot, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 cups water
  • 2 Tbsp soy sauce
  • 2 Tbsp EVOO

Instructions:

Pre-heat the oven to 375 degrees. Combine all of the meatball ingredients into a large mixing bowl and mix well by hand.

Line a baking sheet with aluminum foil and grease with non-stick spray. With wet hands, form 2oz meatballs and place them on the prepared baking sheet. Bake the meatballs for 16-20 minutes or until the internal temperature reaches 165 degrees, rotating the meatballs about halfway through.

In a sauce pan, sauté the EVOO, garlic, and shallots over medium heat for 4-5 minutes or until translucent. Pour in the Heath Sparkling Wine and allow to simmer until it has reduced by about half.

Add in the orange marmalade, grated ginger, sugar and water, and whisk together. Allow to cook over medium heat for another 8-10 minutes or until the sauce has thickened.

Place the meatballs on a serving dish and pour the orange-ginger glaze over the meatballs. Garnish with sesame seeds and chives. Serve with a glass of Ebullience and ENJOY!

Thanksgiving Traditions & Tasty Pairings

Whether it’s the Macy’s Thanksgiving Day Parade, afternoon football, or family games, Thanksgiving Day is often a day filled with traditions. It’s also a day filled with the best meals and dishes of the year. And the best foods should be paired with only the best wines.

This year our Heath Sparkling and Grape Creek staff teamed up to create a day full of Thanksgiving pairings guaranteed to please not only your taste buds but also all those you may be hosting. Having these on the table this Thanksgiving will surely not disappoint!

Whether you’re starting your day off by watching the Parade from the couch or curled up by the fireplace, make sure to do so with your favorite pastry and a festive pomegranate mimosa using Heath Sparkling’s Blanc de Blancs. See our simple Pomegranate Mimosa recipe below!

When hosting Thanksgiving Lunch (or dinner), you’re sure to have a mix of palate preferences at the table. So, having wines accessible to all is key. We’d recommend serving Grape Creek’s Viognier at 45* or Grape Creek’s Rendezvous chilled to about 55*. Regardless of who’s at the table or what’s being served, these wines will enhance all your favorite flavors.

While the Cowboys are on or the family breaks out the board games, grab a light snack and some Heath Sparkling to sip on. One of our favorite snack pairings is our Heath Sparkling Ebullience and white cheddar popcorn. This is also the perfect pairing for those families that like to break out the first Christmas movie of the season on the night of Thanksgiving.

Now for the best part of the day… the desserts. If your taste buds are craving something like chocolate mousse laced with Grand Mariner, make sure to pour a glass of Grape Creek’s Port to enjoy with it. But if you’re more of a sweet potato cheesecake with pumpkin spice whip (check out our Fall Pairing blog for the recipe), then fill your flute with Heath Sparkling Adoration. Here’s pro-tip: make sure your wine is sweeter than your dessert!

Heath Sparkling Pomegranate Mimosas

  • 4oz Heath Sparkling Blanc de Blancs
  • 2oz Pomegranate Juice
  • A flute, not a saucer
  • Pomegranate Seeds
  • Rosemary for garnishing

Pour the wine into the flute first, then add the pomegranate juice. Add a spoonful of pomegranate seeds and garnish with rosemary.

New Fall Pairings & Exclusive Sweet Potato Cheesecake Recipe

Another Texas vineyard harvest season has come to an end, the Hill Country weather is ever so slightly cooling off, and pumpkins have made their appearance on the front porch steps. Which, can only mean one thing: fall has finally arrived. And after enduring a grueling hot summer, nothing sounds more refreshing than some crisp, chilled sparkling wine and our newest fall pairings. With butternut squash, pumpkin and sweet potato included, we’ve not only curated pairings that enhance your enjoyment of sipping on our sparkling wines, but we’ve also incorporated all your favorite fall flavors. You’ll want to make sure you reserve your Heath Sparkling Wines tasting experience before these decadent bites are gone! Here’s what you have to look forward to:

But if that wasn’t enough, our in-house chef, Brayden Lacey, gave us the inside scoop on the pairing we might be most excited about: the sweet potato cheesecake and pumpkin spice whip! If you couldn’t get enough during your Heath Sparkling Wines tasting, now you have the luxury of enjoying in the comfort of your own home. Hosting Thanksgiving this year? You’re certain to wow the family by bringing this out for dessert with a bottle (or two) of Adoration. Now that would be a Happy Thanksgiving. Find the recipe below and do try this at home.

Sweet Potato Cheesecake with Pumpkin Spice Whipped Cream

Prep Time: 30 minutes Total Time: ~6.5 hours Servings: 14

Ingredients:

  • 16 oz cream cheese, room temperature
  • 2 cups mashed sweet potatoes
  • 4 oz sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 cup sugar
  • 12 sheets of graham crackers
  • 1/3 cup butter, melted
  • 12 oz heavy whipping cream, divided
  • 4 tbsp cup powdered sugar, divided
  • 2 tsp pumpkin pie spice

Instructions:

To make the crust:

Using a food processor, pulse the graham crackers into fine ground. While the food processor is on, slowly pour in the butter.

Spray a 9 or 10 inch spring form pan with nonstick cooking spray. Then pour in the graham cracker mix and flatten while just slightly pushing the mix up on the sides.

To make the filling:

In a bowl, combine the sweet potatoes, condensed milk, vanilla, cinnamon and sugar. With a hand mixer, mix until smooth then add the cream cheese. Continue mixing at medium speed.

In a Kitchen Aid mixer (or hand mixer), add 3/4 cup of heavy cream and 2 tablespoons of powdered sugar. Mix on high until the peaks are stiff (approximately 5 to 6 minutes).

Fold the whipped cream into the sweet potato mixture until fully incorporated. Then pour the mixture and spread evenly over the crust.

Refrigerate for 6 hours.

To make the pumpkin spice whip:

In the same bowl used for the sweet potato mixture, add the remaining 3/4 cup of heavy cream, two tablespoons of powder sugar and pumpkin spice. Mix with mixer until whipped.

After 6 hours (or more), remove the cheesecake from the refrigerator and spread the whipped cream evenly over the top. Dust with pumpkin pie spice and enjoy!

Wine Club Pick Up Center

If you have visited either of our beautiful Hill Country wineries over the last few months, you may have noticed a few changes. From olive trees to the Heath Sparkling Wines Member patio, our piece of paradise in Fredericksburg, Texas continues to evolve.

A recent project nearing completion is our new Wine Club Pick Up Center. As we prepare for the facility to open, we are delighted to share more about the benefit to our Members along with frequently asked questions.

The Pick Up Center was created as a convenience for our Members. By utilizing this covered drive through, Members can enjoy the ease of having Wine Club allocations brought directly to their car. The option to purchase additional wine will be available as well. By moving Wine Club allocations to the Pick Up Center, we were able to repurpose the existing storage and packing areas in order to provide a better experience for our Members. We are thankful for your continued support and look forward to your next visit!

Where is the Wine Club Pick Up Center located?

The Wine Club Pick Up Center is located on the same property as Grape Creek Vineyards and Heath Sparkling Wines. The address is 10753 E. US Hwy 290 Fredericksburg, TX 78624. (Suite A for Grape Creek Vineyards; Suite B for Heath Sparkling Wines)

What are the Wine Club Pick Up Center’s hours of operation?

The Wine Club Pick Up Center will be open daily from 11 AM-5:30 PM. Please note that hours of operation are subject to change.

I am a Grape Creek and/or Heath Sparkling Wine Club Member, can I pick up my Wine Club allocations here?

Yes, Members who pick up may do so at the Wine Club Pick Up Center. Members who have selected to have their wines shipped can still purchase additional wine here. If you wish to change your allocation preference from “ship” to “pick up”, you can make this change within your Member portal. We request that changes to your membership are made at least 10 business days prior to the upcoming allocation month. Keep in mind, this change will apply to future allocations. For further assistance with your membership, contact us here for Grape Creek and here for Heath Sparkling.

How can I access the Wine Club Pick Up Center?

When you reach the parking lot, take a left turn and follow the road to the Wine Club Pick Up Center drive. There is no need to exit your vehicle; simply pull up to the door under the awning and a staff member will greet you.

I am a Member, can I purchase more wine in addition to my allocation?

Yes, you can! Please let our staff know which wine(s) you would like to purchase and they will assist.

Am I able to continue picking up my Wine Club allocations inside of the Grape Creek and/or Heath Sparkling tasting rooms?

We have retained some storage space for a limited number of Club allocations in the tasting rooms; however, the space is limited and we request that Members utilize the new Pick Up Center whenever possible.

May I continue to pick up Grape Creek and/or Owner’s Club Wine Club allocations at the Fredericksburg on Main and Georgetown on the Square tasting room locations?

Yes, Grape Creek and Owner’s Club allocations will continue to be available for pick up at the Fredericksburg on Main and Georgetown on the Square tasting rooms. Heath Sparkling Wines are only available for pick up at the Hwy 290 location in Fredericksburg.

I am not a Member, can I purchase wine at the Wine Club Pick Up Center?

Yes, guests may utilize the Wine Club Pick Up Center to purchase wine from the Grape Creek collection. Please note that wines from the Owner’s Club and Heath Sparkling collections are only available to Club Members.

How can I become a Member?

We welcome new visitors and returning guests to enjoy a Grape Creek Vineyards or Heath Sparkling Wines tasting experience. Reservations are highly encouraged and can be made here for Heath Sparkling Wines and here for Grape Creek Vineyards.

Heath Sparkling Wines Member Patio Update

We are thrilled to share that our new Heath Sparkling Wines Member patio is nearing completion! This stunning expansion of our Hill Country oasis will soon be open to both Grape Creek and Heath Sparkling Wine Club Members.

In preparation for the patio’s debut, we have compiled a list of frequently asked questions regarding this new space. Be sure to follow along here for progress updates and more details. We look forward to welcoming our Members to the new patio this fall!

Where is the new patio located?

The new patio is adjacent to the Heath Sparkling Wines tasting room, located at 10591 E. US Hwy 290 Fredericksburg, TX 78624.

I am a Heath Sparkling Wines and/or Grape Creek Vineyards Member, will I receive a complimentary glass of Heath Sparkling when I visit?

Yes, Heath Sparkling and Grape Creek Wine Club Members will receive up to two complimentary glasses of either Heath Sparkling wine or Grape Creek wine on Member visits to Heath Sparkling or Grape Creek Vineyards on Hwy 290*. Only Grape Creek wines will be offered for the complimentary glass at our Fredericksburg on Main and Georgetown on the Square tasting room locations. (*Glass not included, max one per person, max two per week per membership)

I am a Grape Creek Member, can I enjoy the new Heath Sparkling patio?

Yes, both Members of Grape Creek Vineyards and Heath Sparkling Wines will have access to the Heath Sparkling patio.

I am a Heath Sparkling Wines and/or Grape Creek Vineyards Member, how many guests may I bring?

We can accommodate groups of up to six people. Our Members are welcome to bring up to five guests.

Can I purchase by the glass or a bottle?

Heath Sparkling Wines and Grape Creek Vineyards Wine Club Members may purchase wine by the glass or bottle to enjoy when seated on the Heath Sparkling Wines Member patio. Wine selections from both Heath Sparkling and Grape Creek will be available.

Do you serve food?

Yes, we have partnered with Stout’s Signature at Grape Creek to offer a small bites menu.

Do you offer reservations?

We do accept reservations and encourage them, particularly for weekend visits. Once the patio has opened, reservations will be available online using your Member login. Walk-ins are welcome, subject to availability. Heath Sparkling Members can make reservations through the Heath Sparkling website and Grape Creek Members can make reservations through the Grape Creek website.

Do I have to be a Member to enjoy the patio?

All seating is reserved for Members of Heath Sparkling Wines or Grape Creek Vineyards and their guests. The Member must be present and may bring up to five guests with them for a group size no larger than six people.

Can I bring my dog?

Pets are not allowed on property. We will allow ADA service animals. Please note that the ADA does not recognize emotional support animals as a service animal.

Can I bring my children?

Children, including infants, are not allowed on property. We require that everyone visiting is 21+.

Is the existing Heath Sparkling Wines veranda still available to Members?

Yes, the existing veranda will have seating that will now be combined with the new patio seating and accessed the same way as described above.

What are my options if I am not a Member?

We welcome new visitors and returning guests to enjoy a Heath Sparkling Wines tasting experience. Reservations are highly encouraged and can be made here.

Red Pepper Goat Cheese Spread

Almost as intriguing as our Texas sparkling wines are our delectable small bite pairings. A unique treat for guests when enjoying wine tastings, these seasonal delights pair perfectly with each of our wines. Carefully crafted by our in-house chef to complement the clean crispness of our wine, Heath Sparkling Wines offers a one-of-a-kind wine tasting experience.

The Heath Sparkling team enjoys seeing which pairings tend to stand out the most each season. While it was a close call, many of our guests have been particularly fond of the red pepper goat cheese spread. Topped with fresh mint and served on a cracker alongside Heath Sparkling Wines Ebullience, even guests who do not typically enjoy goat cheese have been pleasantly surprised.

With summer quickly coming to a close, we find ourselves craving the combination of our twist on a red pepper spread with a crisp glass of Ebullience. Unique and intriguing, Ebullience is an old-world style ramato crafted from Pinot Grigio. An alluring copper color, it features aromas of grapefruit and peach laced with notes of wild honey.

Red Pepper Goat Cheese Spread

Ingredients:

-8 oz goat cheese

-3-6 oz Stonewall Kitchen Red Pepper Jelly

Instructions:

  1. Place 8 ounces of goat cheese and 3-6 ounces (depending on taste) of red pepper jelly in a mixing bowl.
  2. Mix together. We suggest mixing by hand as this will make cleanup much quicker.
  3. Once mixed, enjoy immediately or refrigerate.
  4. We recommend spreading across your favorite buttery cracker or a celery stick and topping with a mint leaf for a fresh and dynamic flavor profile.

*Chef’s Tip: Let the goat cheese sit at room temperature for 30 minutes before mixing in order to shorten the mixing time.
